Delicious Grain Free Cookies to Satisfy Your Sweet Tooth

When we think of cookies we also think of empty calories. But just one look at the ingredients and you will see that these cookies will not only satisfy your sweet tooth. They are also very nutrient dense so that you don’t have to feel guilty about enjoying them as part of a health diet.
I have made a similar recipe that calls for Splenda but prefer this recipe due to the fact that it does not have any artificial sweeteners. So while these do have honey, if you are counting carbs you wll find that these cookies are still much lower in carbohydrates than traditional cookies. And lets not forget that honey has plenty of health benefits as well.
Coconut flour is really popular in recipes because it is not only gluten free but grain free as well. Coconut flour is nutritious and a good source of lauric acid and manganese. Coconut flour is also high in protein and fiber as well.
Grain Free Chocolate Peanut Butter Cookies
- 1 cup natural peanut butter (if no-salt peanut butter is used, add 1/2 teaspoon salt)
- 4 Tablespoons coconut oil
- 4 Tablespoons honey
- 4 large eggs
- 2 tablespoons coconut flour
- 4 tablespoons unsweetened cocoa
Preheat oven to 375. Line cookie sheet with parchment paper and set aside.
In a large bowl, combine all ingredients until well blended. Drop by spoonfuls onto cookie sheet. Dip fork into cold water and gently press twice into each cookie, making a criss-cross pattern.
Bake for 10-12 minutes, making sure not to over bake.
