Cauliflower Fried Rice Recipe

Cauliflower has always been kind of underrated don’t you think? Cauliflower is actually quite versatile, and can be used in many different ways, such as satisfying a craving for Chinese food with this cauliflower fried rice recipe.  Many of us grew up with a bland serving of cauliflower on our plates that was either nuked in the microwave or boiled, so it is no wonder that many kids would turn their noses up at it.

If you were one of those kids then you can learn to love this vegetable since it can be enjoyed in many ways, such as this mock fried rice recipe. And if you are following a grain free diet like Wheat Belly or Paleo, or even a low carb diet like Atkins, then using cauliflower in place of rice can really satisfy your craving for some of your favorite comfort foods.

Health Benefits of Cauliflower

Cauliflower is one of many cruciferous vegetables, which are high in vitamins, minerals and phytonutrients.  Including cruciferous vegetables like cauliflower, broccoli and cabbage in your diet  has many health benefits and may even protect you from certain cancers and other chronic diseases.

Cauliflower Fried Rice Recipe (Mock Fried Rice)

  • 1/2 medium head cauliflower
  • 1 cup vegetables of choice such as frozen peas and carrots (cooked according to package directions and drained)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil (if following Paleo use coconut oil)
  • 2 tablespoons  tamari soy sauce (grain free if following Wheat Belly or the Paleo Diet)
  • 2 eggs, whisked
  • Salt and pepper to taste
  • 2 green onions (scallions), chopped

Wash and grate cauliflower with a hand grater, or cut into florets and pulse in food processor until rice like texture (click the link to check out our food processor reviews).

Add sesame oil to large frying pan or wok and preheat. Add the riced cauliflower, onion and garlic and saute about seven minutes or until crisp/tender, stirring constantly. Add other vegetables such as peas and carrots as well as the soy sauce during the the last few minutes of cooking time.

In a small bowl, whisk the eggs with just a little salt and pepper.  Push cauliflower mixture toward the edges of the frying pan to create a well in the center of the pan. Pour in whisked eggs and allow to cook until set.

Chop eggs using spatula and fold into cauliflower mixture. Serve immediately.
